Does anyone know how Chef Morimoto made the simulated fish eggs from basil in his match against Chef Amoroso?
Any info would be appreciated. Thank you!
After making the basil puree and he got the juice they added a soya lecithin and a gelling agent and then drop them into a water and calcium acetate solution, this forms the mixture into small balls that resemble fish eggs, it is part of the new Molecular gastronomy craze in the last few years, these product have been around and used by food manufacturers for years, chef just got there hand with them and have experiment with them further.
